Every now and then, a certain type of Monday rolls around…the type where you need to enjoy a mimosa in a mason jar with a few girlfriends. And what goes better with a mimosa than a dinner of BREAKFAST food?!?! Genius.
I’ve recently explored the vast uses of Egg Beaters, and I’ve stumbled upon a delicious “healthified” vegetable quiche, which I just had to share.
Healthified Vegetable Quiche
Ingredients
2 1/2 cups egg beaters (I recommend the Southwestern style)
1/2 cup skim milk
3 ounces Swiss or Gruyere
1 cup fresh spinach
1/2 cup other veggies (I prefer mushrooms and onions)
1 Tablespoon fresh thyme
1/4 teaspoon salt
1/4 teaspoon pepper
1 store-bought crust (it’s just easier. feel free to make your own)
Directions
Simply mix everything together and pour into your pie crust. Reserve a few tablespoons of cheese (or if you have some extra lying around, I really don’t feel guilty about adding two tablespoons of cheese to this recipe). Bake your quiche for 40 minutes at 350 degrees. Sprinkle your extra cheese on top and bake for 10 more minutes, covering the crust if it’s getting too brown. Remove from the oven, and let set for about 10 minutes.
It’s just delicious!!!
