I know that for many of you who try to eat healthy, grilled chicken and veggies get boring after a while. I tend to grill or bake a bunch of chicken on the weekend, and then cook with it throughout the week or throw it on salads. So here’s one little tip for you who are getting sick of plain chicken!
One little way to use your already cooked chicken is to make some little tacos. I’m telling you, this took three minutes. Just throw some chicken, black beans, and whatever else you can think of onto a skillet along with a couple of corn tortillas. It’s an easy way to heat up your goods and get on with dinner! I garnish my tacos with salsa, lettuce, a sprinkle of cheese and a dollop of greek yogurt. Enjoy your quick dinner!
