Easy Appetizers {Caprese Bites + Grilled Pear Crostini}

Every now and then, you want to make a delicious appetizer. Sometimes, I’m in the mood to do something super complicated or impressive. But other times I just want something easy…and still kind of impressive, of course. But most importantly, I want DELICIOUS. And so does everyone who is going to eat them, right?

Last night we had a little girls night where we decided to just have appetizers for dinner (genius, right?). And I was in the mood to make something simple. And so I give you appetizer #1…

Caprese Bites


Grape or Cherry Tomatoes
Mini Mozzarella Balls
Fresh Basil
Balsamic Vinegar


You know how this goes…stick ’em all on a toothpick! I simmered my vinegar in a saucepan for 10 minutes or so to make it more of a drizzle, and less of a, well, vinegar. Truly, you can put these together however you’d like!

And then, I bring you appetizer #2…

Grilled Pear Crostini

{it’s more delicious than it looks…trust me on that. these are inspired by Two Peas and Their Pod, and they made them look a lot prettier than I did!}


One Baguette
2 pears
One small wheel of brie or Camembert cheese
Honey or agave


Preheat your oven to 400 degrees. Slice your baguette about 1/2 inch thick (I recommend cutting on an angle so you get that nice long pieces. Place these on a baking sheet, and top each slice with a good spread or slice of cheese. Place these in the oven for 5-7 minutes, until they are nice and toasty and your cheese is bubbling.

While they are in the oven, slice your pears up and give them a good drizzle of honey or agave. I laid these on my george forman grill, but if you have any type of grill top, it’ll work just fine. Give them a good grill on each side, then lay a slice on each piece of cheesy toast.

Give them one more drizzle of honey for good measure, and you are all set! They basically taste like miniature baked bries…
