I debated sharing this recipe because it’s so amazingly delicious, yet so easy. Though I love the thought of everyone oooooing and ahhhhhing over my cooking skills, I finally decided to tell the truth. So here, the simplest, most delicious tomato soup ever. It serves six to eight people (or four boys) so I end up doubling it for large groups.
It’s best eaten with grilled cheese during a Monday night Packers vs. Bears football game.
It tastes best when the Packers actually win though. Luckily though, if you add wine, beer, and some cookies into the mix, a loss doesn’t sting quite so badly.
Mom’s Tomato Soup
Ingredients
2 Tablespoons butter
1 onion
28 oz diced tomatoes
22 (ish) oz condensed tomato soup
1 1/2 c. milk
1 teaspoon paprika
1 teaspoon dried basil
1 teaspoon sugar
1/4 teaspoon garlic salt
8 oz cream cheese (don’t use the low fat stuff…trust me on this one)
Directions
1. Saute the butter and onions.
2. Add everything except the cream cheese. Bring to a boil and simmer for 30 minutes.
3. Lower the temperature and add the cream cheese (in chunks). Let the soup continue to heat so the cheese melts, stirring occasionally.
Voila! Deliciousness. What more could a girl need in life?
Reactions to this meal were generally positive, though very full.
