Stuffed Tomatoes with Ricotta, Corn, and Pesto

A.k.a. heaven.

Thanks, Veggie Belly, for inspiring this girl’s belly.

After carving out the insides of a few lucky tomatoes, I think wine is appropriate.

That white filling in the photo is what makes these heaven– ricotta, corn, pesto…And to think. There was a time when I didn’t even LIKE tomatoes.

Topped with breadcrumbs and ready to get toasty!

Aaaaaand toasted tomato perfection.

Along side toasted mushroom pasta, this is obviously the most toasted, tasty meal of all time.
