Though I believe, at this point, that I can name my favorite pizza topping combination, I am still working to find a homemade crust that I like. I think the dough we used here has potential, but it needs a bit more flavor. Maybe some salt, maybe some herbs, maybe some cheese…not quite sure yet, but I think it’s a good starting point.
Ok, so I would name my signature pizza combination as: carmelized onions, goat cheese, mushrooms, and spinach. I think it would be perfected with a significant brushing of garlic-infused olive oil, something I didn’t make this time around.
This make-your-own-pizza dinner served as the perfect gathering food on New Year’s Day when we broke in the new Wii. Pizza, brownies, wine, friends…life is good.
To Carmelize Onions:
I used three big onions here, and it made plenty for my double recipe of crust. Just chop up your onions (I like long strips) and put them in a bit of oil on medium high heat for about 10 minutes, until they start to cook. Lower your heat to medium, and throw in a bit of salt and sugar (to help the carmelization process). Continue stirring over the next hour until they are beautifully brown and translucent. YUM!!
Yum. Can I get one of those sent east pronto? They were so delicious…my peanut butter crackers for lunch just aren’t cutting it now!
